These delicious Cinnamon Applesauce Muffins are sweetened with applesauce and spiced with cinnamon. And they make a simple breakfast or snack for those busy on-the-go mornings!

I’ve shared multiple health-ish muffins on this website. And you know what? I’m not 100% sold on them. And by that I mean I make them for the kids, I eat a few here and there, but I’m not satisfied or proud of the recipes. I’ve often thought about taking down the healthy chocolate muffins because I’ve made them 3 times, and 2 out of 3 times they were great and then one time they were a flop. Don’t ask me why. I’M NOT A BAKER! But these cinnamon applesauce muffins? Well they may have just converted me to a once-in-awhile baker… who will now only make THESE muffins! [Please hold me to that claim if I ever share another baked muffin on here].

You’ll notice in this recipe that beyond the applesauce, there’s nothing super healthy about these cinnamon applesauce muffins. I used white sugar and flour. Refined flour folks! I thought about spending time baking a few batches and playing around with the ingredient list, but then I realized I’d much rather spend time playing with my kids OR sleeping while they sleep. And what’s wrong with a little sugar and flour every now that then?! Nothing in this registered dietitian’s book! Plus, the fact that I am not wincing while sharing a muffin recipe with you for fear that I’ll get some bad comments means one thing: you’ve GOT to make these.

And if you want to cut the sugar, add whole wheat flour, coconut oil, etc. Please share the method to your madness. Because I haven’t figured out the science behind healthy baking and will never strive to do so! I’ve got this dinner thing down and will take baking in stride. But if I had to sell one thing at a bake sale I’ve now found my product: cinnamon applesauce muffins!

Serves: 12 muffins
Ingredients
  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • ½ cup butter, melted
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 375. In a large mixing bowl, add dry ingredients. In a separate bowl, add wet ingredients and whisk until combined.
  2. Add wet ingredients to the dry and stir until combined. Evenly scoop mixture into a greased or lined muffin pan, filling about ⅔ of the way full.
  3. Bake for 20 minutes, or until a toothpick comes out clean.
